How Experienced Traders Find the Best Quality Black Pepper
The checks seasoned pepper traders use — litre weight (bulk density), the float test for light berries, moisture, aroma, colour, crush and bite tests, and lab analysis — with a free quality checker.

Experienced pepper traders can judge a lot in minutes, using their hands, nose and a few simple tools. Here's what they check, and how you can do the same. Record your results in the free black pepper quality checker.
1. Litre weight (bulk density)
The first test almost every trader does: fill a 1-litre measure loosely, level it and weigh it. Heavier means better.
| g/L | What it suggests |
|---|---|
| 580+ | Very heavy, mature, top quality |
| 570 | Heavy, good |
| 550 | Common export quality |
| 500 | Lighter, lower value |
| below 500 | Light berries or adulteration likely |
2. The float test
Drop a weighed sample into water (or alcohol). Light berries float: immature or hollow berries, and papaya seeds if the lot is adulterated. Weigh what floats to get the light-berry percentage.
3. Moisture
Pepper above around 12% moisture risks mould. Traders use moisture meters, and a dry berry should feel hard and snap cleanly.
4. Look
- Uniform size and dark brown-black colour
- Well-wrinkled skin, since mature berries shrink into deep wrinkles
- Few stalks, pinheads or broken berries
- No dust, stones or mould
5. Smell and bite
Crush a few berries: good Malabar pepper releases a strong, fresh aroma immediately. Bite one, and the heat should be sharp and lasting. A weak smell suggests old or exhausted pepper.
6. Size
Graders use sieves to check size, which decides grades like TGEB and TGSEB. See pepper grades.
7. Lab analysis
For export, traders back their judgement with lab tests: piperine, volatile oil, aflatoxins, pesticide residues, Salmonella and ethylene oxide. See spice quality testing.
8. Consistency
The best traders check the shipment against the approved sample, because a good sample means nothing if the lot doesn't match.
