Moisture and Weight Loss in Spice Trading: Why Every Percent Matters

How moisture affects the weight, value and safety of spices, coffee and pulses — the dry-matter formula, a worked example, contract limits and how to avoid paying for water.

Moisture is the hidden variable in every spice deal. Too much, and you're paying for water and risking mould. Too little, and the seller is giving weight away. Work it out with the free moisture weight loss calculator.

The formula

Only water evaporates, so the dry matter stays the same:

New weight = current weight × (100 − current moisture) ÷ (100 − target moisture)

Worked example

10,000 kg of pepper at 14% moisture, dried to 11%:

  • Dry matter = 10,000 × 0.86 = 8,600 kg
  • New weight = 8,600 ÷ 0.89 ≈ 9,663 kg
  • Loss ≈ 337 kg (3.4%)

At USD 6.50/kg, that's about USD 2,190 of value in water.

Why moisture matters

Issue Effect
Weight High moisture means you pay for water
Mould & aflatoxins High moisture in storage raises the risk
Shelf life Wet products deteriorate faster
Contract claims Moisture above the spec is a common claim

Typical limits

Many dried spices trade at around 10–12% maximum moisture, and green coffee at around 10–12.5%. Always use the figure in your contract.

Protect yourself

  • Measure moisture at loading and on arrival
  • Specify the method (meter or lab) in the contract
  • Store and ship dry, using liners and desiccants
  • Check with the black pepper quality checker
